Jam Filled Almond Muffins
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2/3 cup buttermilk
- 2 large eggs
- 1 tsp almond extract
- 1/2 cup your favorite jam or preserves e

- Sliced almonds for topping optional
Instructions:
Preheat your oven to 375F 190C and line a muffin tin with paper liners
In a large bowl, combine the all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt
In another bowl, whisk together the melted butter, buttermilk, eggs, and almond extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; a few lumps are okay
Spoon a tablespoon of muffin batter into each muffin cup, spreading it to cover the bottom
Add a teaspoon of jam on top of the batter in each muffin cup
Cover the jam with the remaining muffin batter, filling each cup about 2/3 full
If desired, sprinkle sliced almonds on top of each muffin
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
