Polish Sausage & Cabbage Soup

Polish sausage, cabbage, and vegetables are slow-cooked to perfection in a savory broth to make this hearty and flavorful soup.

Ingredients:

  • 1 lb Polish sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 small head cabbage, chopped
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 6 cups chicken broth
  • 1 can 14
  • 5 oz diced tomatoes
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 1 bay leaf

Instructions:

In a slow cooker, combine sliced sausage, chopped onion, minced garlic, chopped cabbage, sliced carrots, diced potatoes, chicken broth, diced tomatoes, dried thyme, salt, pepper, and bay leaf

Stir to combine ingredients

Cover and cook on low for 6-8 hours or high for 3-4 hours, until vegetables are tender and flavors are melded

Discard bay leaf before serving
