Chinese Buffet Coconut Chicken

This Chinese buffet-style coconut chicken recipe combines crispy fried chicken with the tropical flavor of coconut. Its a delightful dish thats sure to impress your guests

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 1/2 cup shredded coconut
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Sweet chili sauce for dipping optional

Instructions:

Cut chicken breasts into pieces that are easy to eat

Put cornstarch, salt, and pepper in a shallow dish

First, coat the chicken pieces evenly with the cornstarch mixture

Then, dip them in beaten eggs

In a deep frying pan or wok, heat the vegetable oil over medium-high heat

It will take about 5 to 6 minutes for each batch of chicken to turn golden brown and be fully cooked

Take the chicken out of the oil and pat it dry on paper towels to get rid of the extra oil

Warm up the coconut milk over low heat in a different saucepan

Spread out the coconut shreds on a plate

Put pieces of fried chicken into warm coconut milk and then roll them in coconut shreds to cover them

Move the chicken that has been coated in coconut to a serving platter

If you want, you can serve it hot with sweet chili sauce to dip it in
