Chickpea Noodle Soup with Fresh Thyme

A thick and filling soup made with chickpea noodles and the fragrant essence of fresh thyme. This delicious vegan dish is ideal for a warm, filling supper.

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 cup dried noodles of your choice
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Instructions:

Warm up the olive oil in a big pot on medium heat

Add the chopped celery, carrots, and onion

Saut the veggies until they become soft

Add the minced garlic and continue cooking for one more minute

After adding the vegetable broth, bring it to a boil

Cook the dried noodles until they are al dente

Add salt, pepper, dried thyme, and chickpeas

To let the flavors meld, simmer for ten to fifteen minutes

Taste and adjust seasoning

Garnish with fresh thyme leaves and serve hot
