Enjoy this Coconut Chia Pudding as a tasty vegan and gluten-free dessert. Fresh fruit, creamy coconut milk, and healthy chia seeds all come together to make a tasty treat.

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 1 tablespoon maple syrup or agave nectar
  • 1/2 teaspoon vanilla extract
  • Fresh fruit of your choice such as berries, mango, kiwi

Instructions:

In a bowl, mix together chia seeds, coconut milk, maple syrup or agave nectar, and vanilla extract

Cover and refrigerate for at least 4 hours or overnight, stirring occasionally
