Coconut Chia Pudding with Fresh Fruit

Ingredients:
- 1/4 cup chia seeds
- 1 cup coconut milk
- 1 tablespoon maple syrup or agave nectar
- 1/2 teaspoon vanilla extract
- Fresh fruit of your choice such as berries, mango, kiwi
Instructions:
In a bowl, mix together chia seeds, coconut milk, maple syrup or agave nectar, and vanilla extract
Cover and refrigerate for at least 4 hours or overnight, stirring occasionally
