Toasted Millet Salad: Gluten Free
A delicious and nutritious gluten-free salad featuring toasted millet, fresh vegetables, and a tangy dressing.
Ingredients:
- 1 cup millet
- 2 cups water
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh mint leaves
- 1/4 cup crumbled feta cheese optional
- Mixed greens for serving
Instructions:
Toast the millet in a dry skillet over medium-low heat for about 5 minutes, stirring often, until it turns golden and smells good
Bring water to a boil in a saucepan
Lower the heat, add the toasted millet, cover, and let it simmer for 15 minutes, or until the water is absorbed and the millet is soft
Take it off the heat and let it cool down
To make the dressing, mix olive oil, apple cider vinegar, Dijon mustard, salt, and pepper in a small bowl with a whisk
Put cooked millet, cherry tomatoes, cucumber, red onion, parsley, mint, and feta cheese, if you want, in a large bowl
Add the dressing to the salad and toss it around to cover it all
Place on top of mixed greens
