Fig, Grape, and Spinach Salad

This Fig, Grape, and Spinach Salad is a great way to change up your lunch The freshness of the figs and grapes, the earthiness of the spinach, and the creaminess of the feta cheese make this dish perfect for any taste.

Ingredients:

  • 1 cup fresh figs, sliced
  • 1 cup red grapes, halved
  • 4 cups fresh baby spinach leaves
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions:

To get the fresh figs ready, wash them and cut them into small pieces

Cut the red grapes in half and set them aside

Cut the fresh baby spinach leaves in half and put them in a large salad bowl

Add the sliced figs and grapes

Break up the feta cheese and chop the walnuts and sprinkle them on top of the salad

To make the dressing, mix the extra virgin olive oil and balsamic vinegar in a small bowl with a whisk

Pour the dressing over the salad and gently toss everything together

Add salt and pepper to the salad as needed

Serve right away as a healthy and refreshing lunch
