Fiber-Packed Vegan Quinoa Salad
This vibrant and nutritious quinoa salad is loaded with fiber, magnesium, protein, and antioxidants. Its a delicious and satisfying dish thats perfect for lunch or as a side dish for dinner. The combination of quinoa, black beans, vegetables, and avocado makes it not only tasty but also incredibly nutritious.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
In a medium saucepan, combine quinoa and water
Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed
Remove from heat and let it cool
In a large mixing bowl, combine cooked quinoa, black beans, corn, red bell pepper, red onion, cherry tomatoes, and cilantro
In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper to make the dressing
Pour the dressing over the salad and toss gently to coat all ingredients evenly
Gently fold in diced avocado
Serve immediately or refrigerate until ready to serve
