Creamy Tortellini with Asparagus, Chicken, Bacon
Ingredients:
- 1 lb cheese tortellini
- 1 lb chicken breast, diced
- 6 slices bacon, chopped
- 1 bunch asparagus, trimmed and cut into bite-sized pieces
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Cook tortellini according to package instructions
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add chopped bacon and cook until crispy
Remove bacon from skillet and set aside
In the same skillet, add diced chicken breast
Season with salt and pepper
Cook until chicken is no longer pink, about 5-7 minutes
Remove chicken from skillet and set aside
Add minced garlic to the skillet and cook for 1 minute, until fragrant
Add asparagus to the skillet and cook until tender, about 5 minutes
Return cooked chicken and bacon to the skillet
Stir in heavy cream and grated Parmesan cheese
Cook until sauce is heated through and slightly thickened
Add cooked tortellini to the skillet and toss to coat evenly with the sauce
Serve hot, garnished with additional Parmesan cheese if desired
