Autumn Acorn Squash & Carrot Soup
A delicious and healthy soup that tastes like fall with the sweetness of acorn squash and the earthy warmth of carrots. Great for cozy nights in.
Ingredients:
- 2 acorn squash, peeled and diced
- 4 carrots, chopped
- 1 onion, finely diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/2 cup coconut milk
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add onions and garlic, saut until fragrant
Add acorn squash and carrots, cook for 5 minutes
Pour in vegetable broth, cinnamon, nutmeg, salt, and pepper
Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender
Use an immersion blender to puree the soup until smooth
Stir in coconut milk and simmer for an additional 5 minutes
Adjust seasoning if necessary
Serve hot, garnished with fresh parsley
