White Bean and Artichoke Hummus
This White Bean and Artichoke Hummus is a delicious twist on traditional hummus. The addition of artichoke hearts gives it a unique flavor and a creamy texture. Its perfect as a party dip or a healthy snack.
Ingredients:
- 1 15 oz can white beans, drained and rinsed
- 1 14 oz can artichoke hearts, drained
- 3 tablespoons tahini
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped for garnish
- 1 tablespoon pine nuts for garnish
Instructions:
Sliced garlic, lemon juice, olive oil, ground cumin, salt, and black pepper should all be put into a food processor along with white beans and artichoke hearts
If you need to, scrape down the sides of the bowl as you blend to make it smooth and creamy
Place the hummus in a bowl for serving
Put chopped fresh parsley and pine nuts on top
Chips, crackers, or vegetable sticks go well with it
