Pork Chops with Chive Butter and Balsamic Roasted Onions
Ingredients:
- 4 bone-in pork chops
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 4 tablespoons unsalted butter, softened
- 2 tablespoons fresh chives, finely chopped
- 2 large red onions, sliced
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Fresh parsley, chopped for garnish
Instructions:
Preheat the oven to 400F 200C
Rub pork chops with olive oil and season with salt and black pepper
In a small bowl, mix softened butter and chopped chives
Set aside
Place the sliced red onions on a baking sheet
Drizzle with balsamic vinegar and honey
Sprinkle with dried thyme and garlic powder
Toss to coat evenly
Roast the onions in the preheated oven for 20-25 minutes or until they are caramelized and tender
Stir occasionally
While the onions are roasting, grill or pan-sear the pork chops for 4-5 minutes on each side or until cooked through
Spread the chive butter over the cooked pork chops
Serve the Pork Chops with Balsamic Roasted Onions, garnished with fresh chopped parsley
