Insanity Burger
Ingredients:
- 4 quality burger buns
- 600g ground beef at least 15% fat
- 2-3 tbsp hot chili sauce
- 2 large handfuls of arugula
- 1-2 large handfuls of ice cubes
- 150g smoked cheddar cheese, sliced
- 4-8 rashers of smoked bacon, depending on size
- 4 tsp mayonnaise
- 4 tsp tomato ketchup
- 1 red onion, finely sliced
- 4 large gherkins, sliced
Instructions:
Place a grill pan or barbecue on high heat
Divide the beef into 4 equal portions, then shape into patties, about 2cm thick
Season generously with salt and pepper
Place the ice cubes on a tray, put a wire rack on top, then lay the cheese slices on the rack
Place the tray under the grill until the cheese is melted and the ice has almost melted, giving you nice, wobbly cheese slices
Grill the bacon alongside the cheese until crisp and golden
Toast the buns on the grill while everything is cooking 30 seconds is plenty
Assemble your burgers: spread a little mayonnaise and ketchup on the bottom halves of the buns, add the patties, a rasher of bacon, a slice of melted cheese, some onion, gherkins and rocket
Squirt over a little more ketchup, pop the top of the bun on and tuck in
