Vegan Whipped Ricotta Toast

Ingredients:
- 1 cup raw cashews, soaked overnight
- 1/4 cup unsweetened almond milk
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt and pepper, to taste
- 4 slices whole grain bread, toasted
- Toppings of choice: avocado slices, cherry tomatoes, microgreens, etc
Instructions:
Soaked cashews, almond milk, nutritional yeast, lemon juice, minced garlic, salt, and pepper should all be put into a food processor
To make it smooth and creamy, scrape down the sides of the bowl as needed
To make it taste better, you can add more salt or lemon juice if you like
Spread a lot of the whipped ricotta mixture on slices of toasted whole grain bread
Add your favorite toppings, like avocado slices, cherry tomatoes, microgreens, or anything else you like
