Chickpea and Vegetable Stir-Fry
This Chickpea and Vegetable Stir-Fry is a quick and nutritious vegan meal packed with protein and fiber. Its perfect for a busy weeknight dinner.
Ingredients:
- 2 cups cooked chickpeas
- 2 cups mixed vegetables such as bell peppers, broccoli, carrots
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
- Salt and pepper to taste
- Cooked brown rice or quinoa for serving
Instructions:
Make a slurry with water and cornstarch in a small bowl
Put away
On medium heat, warm up the sesame oil in a big pan
Put in the grated ginger and minced garlic
Saut for one minute, until the smell is nice
Put the mixed vegetables in the pan and stir-fry them for 5 to 7 minutes, until they get a little soft
Add the cooked chickpeas to the pan and mix them in
Put soy sauce on top of the food and mix it well
Add the cornstarch slurry to the pan and stir it around all the time until the sauce gets thick
Add pepper and salt to taste
Hot stir-fry should be served on top of brown rice or quinoa that has been cooked
