Ingredients:
- 4 burger buns
- 1 pound ground beef
- 8 ounces sliced mushrooms such as cremini or button
- 4 slices of provolone cheese
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh lettuce leaves and tomato slices for garnish
Instructions:
Heat a skillet over medium-high heat and add 1 tablespoon of olive oil
Add the sliced onions and cook, stirring occasionally, until they become caramelized and golden brown
This may take 20-30 minutes
Set aside
In a separate skillet, heat another tablespoon of olive oil over medium heat
Add the minced garlic and sliced mushrooms
Saut until the mushrooms are tender and browned
Season with salt and pepper
Set aside
In a small bowl, mix together mayonnaise, Dijon mustard, and lemon juice to make the garlic aioli
Set aside
Preheat your grill or stovetop pan over medium-high heat
Divide the ground beef into four equal portions and shape them into burger patties
Season with salt and pepper
Grill or cook the burger patties for about 4-5 minutes on each side for medium-rare or longer if you prefer your burgers more well-done
In the last minute of cooking, place a slice of provolone cheese on each patty and cover with a lid to melt the cheese
While the cheese is melting, lightly toast the burger buns on the grill or in a toaster
To assemble the burgers, spread garlic aioli on the bottom half of each bun
Place a lettuce leaf on top of the aioli, followed by the burger patty with melted provolone
Add a generous portion of caramelized onions and sauted mushrooms on top of the patty
Top with tomato slices and the other half of the bun
Serve your Mushroom Burger with Melted Provolone, Caramelized Onions, and Garlic Aioli immediately, and enjoy
